Recipe: Coffee & Walnut Cupcakes

A family favourite of ours is good old coffee & walnut cake, mainly because my mum has crafted the BEST recipe over the years, which I decided to try out as cupcakes. They've turned out not too bad at all, so I thought I'd share the very simple recipe here.

For the cakes 
150g self-raising flour
150g margarine 
150g golden caster sugar 
2 eggs 
2tsp instant coffee granules (dissolved in hot water) 
40g chopped walnuts 

For the icing 
200g icing sugar 
1tsp coffee (dissolved in hot water)
1 walnut half for each cupcake 

To make the cakes: 
1. Dissolve the 2tsp of coffee granules in a small amount hot water (just enough to cover the granules really) and set aside to cool 
2. Mix the flour, butter, sugar and eggs together in a bowl until smooth

3. Add the now-cooled coffee mixture to the bowl a little at a time, ensuring its mixed in completely each time
4. Add the chopped walnuts and mx together 
5. Place the mixture into cupcake cases, the mixture should fill 12-15 cakes 

6. Put in the oven at 180 degrees for 20 minutes, or until golden brown
7. Allow to cool

To make the icing: 
1. Again, mix 2tsp's of coffee granules in a little hot water and leave to cool
2. Mix the icing sugar together with a couple of teaspoons of cold water, until it's consistency is thick enough to cover the back of a spoon (basically so it's not too funny when icing the cakes) 
3. Add the coffee mixture and stir well 
4. Cover each cake with some of the icing, and one walnut half 
5. Enjoy!

  1. Nothing goes better with an afternoon cup of coffee than a matching cupcake, and these walnut version is just the ticket.
