Recipe: Summer Fruits Loaf
I'm so desperate for a bit of sun that I'm already dreaming of summer desserts - hence why I just had to have a go at this cake today! I've used raspberries, but you could easily use strawberries, blackberries, blackcurrants, or even a mixture of all your favourites!
Ingredients
For the cake:
250g Self-raising flour
175g Caster sugar
175g Butter
2 Eggs
100g Raspberries
For the topping:
30g Raspberries (plus a couple for decoration, if you wish)
30g Demerara sugar
1 tbsp Orange Juice
Method
Put the caster sugar, butter, eggs and flour together in a bowl and whisk until light and creamy
Place about a third of the mixture into a greased loaf tin, and scatter 50g of raspberries on top. Repeat this step with another third of the mixture, and the remaining 50g of raspberries. Finally, place the remaining third of the mixture
Bake at 180 degrees for one hour , and once its cooked use a skewer to make holes all over the cake.
For the topping, mix the 30g of raspberries with the Demerara sugar in a bowl, mushing the fruit up slightly. Mix in 1 tbsp of Orange Juice, until the mixture is runny so you're able to drizzle it over the cake. Finish by decorating with the remaining raspberries.
Leave to cool, and enjoy!
